Today morning in a rush to cook something for my husband, before he leaves 'khali pet' to his office, I came up with this. It is really quick & healthy. Serve it with puri/parantha.
U will need: 7-8 bhindi(lady's finger), 1 potato, 1/2 tomato, 2-3 cloves of garlic,
1 onion,1 tspn turmeric powder,1 tbspn mustard oil, 1 red chilli, 1 tspn
jeera, salt.
Wash bhindi & let it dry completely.Chopp bhindi in circular pieces of 1/2 inch each. peel off potato, onion & garlic cloves.Cut tomato in square pieces.Cut garlic cloves & onion lengthwise.Cut the potatoes in thin square pieces.
For this, cut potato lengthwise in 2/3 pieces. Again cut each lengthwise in 2/3 pieces,depending upon thickness. now cut thin(1/3 inch) square pieces out of each piece.
Heat oil in a kadai. add jeera & red chilli.Add onion & garlic cloves. Saute for next 2-3 minutes.Add potato. Cook for 2 minutes. Add tomato. cokk for 2 more minutes. Add bhindi. Add turmeric powder & salt.Cook for next 5-8 minutes without covering.
turn off the gas stove & cover kadai. after 2 minutes you are ready to serve.
