Here I am after a long break. my village dhang is situated near the river Bagmati & hence naturally the coastal areas are sandy.the most grown vegetables are parwal & bananas. Yup... No surprises bt banana in its raw form serves as a wonderful vegetable. My mummy says Parwal & Kela are our Khandani Sabji. So, today I am here with a recipe of one of our khandani sabji.
U will need: 5 green bananas,2 medium size onion finely chopped, 2 tbspn mustard oil,1dry red chilli, 1 tbspn coriander powder, 1 tspn turmeric powder, 1 tspn red chilli powder, 1 tspn garam masala, panchforan ( a mixture of five dry spices; ajwain,sarso,saunf,mangraila & methi ke dane.),2-3cloves of garlic & salt to taste.
cut each banana in two or three pieces & keep in water for 5 minutes. Now peel off the skins with the help of a knife. now cut it into half inches thick circular pieces.Heat oil in a kadai.Break dry chilli in two pieces & add to oil. add garlic cloves& panchforan. Add onion & fry till it turns light brown. Add banana pieces. fry for 2 minutes. Add all spices except garam masal & salt.fry for 1-2 minutes. Add 1 small bowl of water n cover the kadai with a lid.keep the flame low. after two minutes, add salt & then add garam masala. Cover it. Cook for 2 more minutes.
& here u r ready with a delicious but easily prepared masale wale kele ki sabji.

Tip of the day: Don't use lohe(iron) ki kadai.
