Sattu Ke Parathe

A lot can be done with the sattu. During scorching summer of north, it keeps u cool with its refreshing drink. When it rains, u can savour its delicacy in the form of parathe n yes... then there is this famous litti from bihar which is prepared using sattu.
There are two different ways u can prepare Sattu for filling. I normally prefer the first method.


U will need: Wheat flour, 1 tspn ajwain, A small bowl sattu, 1 large onion, green chilli, ginger, Coriander leaves, Ghee & Salt.

Add a spoon of ghee/Refined oil to flour. Add ajwain. Mix it  & rub it using ur hands for 5-8 minutes. Make a dough of wheat flour with water & keep aside.
Peel off onion n ginger. Chop the onion, ginger, chilli and coriander leaves very finely.
 
Method 1: Add all these chopped ingredients to sattu bowl. Add salt. Mix it properly.

Method 2: Heat  a little ghee in a pan. Add chopped chillies. Add onion. Saute for a minute. Add ginger & coriander leaves. Saute for 30-40 seconds. Add Sattu. Add Salt. Saute for another 30-40 seconds. Switch off ur stove. Your sattu mix is ready.

Now make balls of wheat-flour dough. Flatten it with hand or belan (roller). Add a spoon of the Sattu mix to it. Bring all the sides together n close the flatten dough properly. Roll it in round shape.
Heat a pan. keep the flame medium. Add the rolled paratha to it. turn it after 35-40 seconds. Smear it with ghee with a  tspn or a brush.keep pressing the paratha with light hands using a flatten spoon/spatula. Cook on both sides till there are brown patches on parathas. Make all the parathas in similar way.
Serve them hot with chutney/ Sauce of ur choice.

Tip Of The Day: Add 4-5 drops of lemon for a small bowl of sattu mix. It will increase the flavour. you may skip it if u like. It wont affect the taste.
