Lauki - known as bottle gourd in english. Though its considered very healthy, people are nt very fond of this. I am one of those rare species.. ;) who loves lauki to the core. This recipe is one of the simplest and healthiest way ; you can cook lauki. This will com eto your rescue when you are watching your weight and still need some tasty veggie on your plate. I mostly cook this when I am running out of time and still want to eat something home-cooked.
You will need: A medium size lauki say 750 gms, 1 large onion, 1 tspn fenugreek seeds, 2 dry red chilli, 2 tspn of turmeric powder, 1.5 tbspn of oil and Salt to taste.
Peel off the skin of lauki. Chop lauki in smaller pieces. Keep aside. Peel and wash and slice the onion lengthwise.
Now, heat pressure cooker. Once heated,add oil to it. Break dry red chillies in two pieces and add it to the heated oil along with fenugreek seeds. Add chopped onion to it after few seconds. Once onion turned softer, Add chopped lauki pieces to the cooker.Saute it for 2-3 minutes. Add turmeric powder and Salt to it. Again saute for 2 minutes. Now add 2-3 tbspoon of water. Now pressure cook it till two whistles. Let the cooker cools off . Uncover the lid and saute for another 3-4 minutes depending upon the level of water you want to keep in the lauki. Do this on high flame and keep stirring. Don't leave unattended. I like it the way it looks in pic- enough water to make lauki moist.
Best served with hot ghee smeared phulkas. I also like it with rice and plain kadhi.
Tip of the Day: Pick a fresh bottle-gourd with softer seeds in it or none at all. This will make the lauki disappear in you mouth (read melt like butter..:) ) Also you can add few round slices of radish before adding chopped lauki. My mother does that,I don't as I kind of hate radish except their parathas. Please don't replace fenugreek seeds with jeera'it will ruin the taste. You can replace dry red chillies with fresh green ones.
