Another year has arrived!! This blog has completed 5 years now. Happy me.. :) Today the post is about the easiest dush you can try,if you want to eat eggs. Egg bhurji..we all have eaten it in its various versions. Yesterday night I did nt had much time but I still wanted to pack office lunch for today. (Yes, I cook my office lunch previous night as I have to be at work by 6:30am). I checked the fridge and I had capsicum(green), eggs, tomatoes and potatoes. I thought for a while abt making aloo shimla mirch but then went for eggs,as it's less time consuming.
So here it is.. This time too, I have tried to take stepwise pics.
You will need: 3 eggs, 1 medium sized onion, 2 small green chillies, 1 medium sized red tomato, 1 green capsicum, 2tspn salt, a pinch of coriander powder, 1tspn of black pepper powder and 1 tbspn cooking oil.
Today, I will tell you how did I exactly went by while cooking this. Do not try this, if you are new to kitchen department. Better to prepare everything handy and then start cooking, if you are a new kid on the block.. :)
Keep eggs out of refrigerator atleast half an hour before. Peel and wash onion. Remove stem and wash green chillies. Wash tomato. Cut capsicum , remove seeds and stem. Wash it properly.
Keep kadai/pan on the stove on a low flame. Meanwhile chop green chillies and onion. Add oil to kadai. Once heated, add green chillies and onion.
Chop capsicum while keeping an eye on onion in kadai. Stir now and then. Once it turns slightly pink, add chopped capsicum.
Chop tomatoes. Add salt and all powders to kadai. Saute it and add tomatoes.
Break the eggs in a bowl. Mix it and add to the kadai.
Now keep stirring the mixture on a slightly higher than medium flame for 5-6 minutes.
Switch off the stove. Serve it with chapati.
P.S. You can use whatever vegetables you like,such as bell peppers, carrots, peas etc. You can try making them in butter sometimes.. It taste great!! Also if any leftovers, make a sandwich.. :)
