Mint Tomato Paneer

For quite  a few years of my life.. I was aware only two dishes of paneer... Palak Paneer and matar paneer. Then I found Paneer bhurji.. Love all of them.. I am sure you too do.
Looking for new ways to cook them while maintaining my simplicity.. is what I always see before cooking anything. So, When I went through a recipe (Jaspreet Sir) recently which said Mint and Tomatoes.. I was excited...as I love the flavour of mint n wanted to do something with it apart from chutney.  Also I loved the fact, that no onions are used. So here is what I have already cooked twice in last two weeks.

U will need: Paneer 125gm,Chopped Ginger 1 tsp,Chopped Garlic 1 tsp,Chopped Mint leaves 2 tbsp,2 large tomatoes, green chilli, jeera 1 tsp,Red Chili powder 1 tsp,Coriander powder 1 tsp,Cumin powder 1 tsp,1 tspn turmeric powder,Cream 1tbsp,Salt to taste,Oil 1tbsp

Heat water and dip paneer piece in it for 10 minutes. It will make them soft. Cut into pieces of ur choice.  Wash and chop tomatoes. Cut green chillies in small fine pieces. 
Heat a pan. Add oil. Once heated, add jeera. Add  chopped green chillies. Add chopped ginger and garlic. Saute for a minute. Add tomatoes. Stir for 2 minutes on a medium flame. Add all the spices.Saute for a minute. Add paneer. Mix it well. Add chopped mint leaves. Saute for 4-5 minutes on sim. 
Add Cream.Switch off the flame. Mix it properly n serve.
I ate with both roti and rice. Loved it with jeera rice though..

Tip of the Day: Always use fresh mint leaves. The flavour will come from them. You may also use home made malai. Also freshly chopped garlic and ginger will increase the aroma..
