Capsicum Soya Chunks with Paneeri Phulke

The day started with a determination to throw away negative energies of my head & heart. What better way rather than immersing urself in cooking & reading. So, ended up spending late morning hours as well as early afternoon in kitchen. Among other things, I prepared capsicum soya chunks with paneeri phulke.
I had run out of cooking gas  a week ago n thanks to government authorities ,I got a refill after a whole week.The delivery guy said my address does nt exist. Somehow I got it a week later but by then  a lot of veggies in my fridge had turned bad. Going to grocery shopping was nt on my list. So with the few items I had,I made this n turned out amazingly well.




U will need: 1 large capsicum, 2 medium carrots, a medium bowl of mini soya chunks, 1 small onion, 1" ginger, 6-7 garlic, 2 green chillies, 1 tspn turmeric powder, 2 tspn red chilli powder, 1 tspn coriander powder, a pinch of garam masala, salt & 1 tbspn cooking oil.

Boil water. Add 1 tspn salt. Add mini soya chunks to it. Remove the vessel from stove n cover it.
Wash & remove all the seed of capsicum. Peel carrots, ginger, garlic as well as onion. 
Now chop all of them separately n keep aside. Now squeeze the soya chunks n wash it twice with normal water. Squeeze water out of them n keep aside.
Now Heat a pan. Add oil to it. Add chopped chillies n garlic to heated oil. Immediately add chopped onions. when onion turns pinkish brown, add chopped ginger to it. Saute n add chopped carrot. Saute for a minute n add chopped capsicum. Cook without a lid on till capsicum becomes tender. Keep the flame medium.
Keep stirring now n then. Add all the spices. Now reduce the flame to low. Cook for a minute n add soya chunks to it. Saute for 2 minutes. Now cook for another 8-10 minutes with lid on n flame on sim. Stir once or twice in between. U r ready to serve after 5 minutes.

Tip of the Day: Use mini soya chunks. I served it with plain paneeri phulke. U may also use it as a side dish during lunch or dinner. Paneeri phulke is easy to made. I had some home made paneer in fridge (in absence of cooking gas, milk got spoiled n i made paneer out of it.) I mixed wheat flour, mashed paneer, a pinch of salt n made a dough of it. Phulke turned out more prettier, tastier n also healthier...dont u think!!
