It seems like long time...I came across this recipe... I m nt sure whether I read it smwhere or watched it on TV...Bt I m sure ki its a Sanjeev Kapoor's idea..with which I played...
Not long ago... I wud nt touch bhindi...Then I started... n still I cant go beyond its dry versions...
So., when I came across this one..it felt lyk a good idea to try it...bt perhaps never was the right time...until today..
U will need : 250 gm Bhindi (Okra), 2 large onion, 2 large tomato, 2 medium capsicum,
1 tbspn ginger-garlic paste, 1 tspn jeera, 3 tbspn olive oil,
1 tspn garam-masala powder, 1 tbspn red chilli powder,
1/2 tbspn coriander powder, salt to taste.
Wash okra/Bhindi. Let it dry. Cut it in long pieces. I preferred an inch. U may keep it 1+1/2 inches long.
Saute it on medium-high flame for 3-4 minutes. Dont leave it unattended.
Mean-while, peel onions, remove the seeds of capsicum properly. Now Chop one onion, one tomato & one capsicum. Cut long thin stripes of rest of them separately.
We r done with the half of the work.
Now, add rest of the oil to heated pan. Add jeera to heated oil. Add ginger-garlic paste immediately followed by chopped onion. Saute for 2 minutes. Keep the flame medium. Add chopped capsicum. Saute for a minute. Add chopped tomatoes. Saute for a minute. Add spices. Cook for next 2 minutes.
Add the other set of onions and capsicum with a gap of 3 minutes. Cook for a minute with lid. Spread tomatoes all over the mixture. Cover n cook for next a minute. Saute it well. Cook for few more minutes,if u think its not cooked yet.
Add bhindi. Saute for a minute. Cover it n leave on low flame for 2-3 minutes.
U r ready to serve. Hmmm.. I can smell the flavour while clickng the pic..The aroma is delicious...
Tip Of The Day : Best served when throwing a party or special lunch/Dinner.
When u add ginger-garlic paste...it splatters a lot..so make sure u quickly cover
wid onions. or Better add them together.
